Lindsay Gardner gave an extremely informative Talk about chocolate and the making of it. We learned the difference between the ‘chocolate maker’ who roasts and creates chocolate paste by ‘conching’ before tempering and forming specialist bars, and a chocolatier as Lindsey is, , who by using a variety of moulds and fillings and essences, creates confections in chocolate. Her chocolatier’s workshop is alongside that of award-winning chocolate maker Duffy, in Wilton Road Humberston.

We also learned that where the bean is grown makes a great variation to the taste even though it may be the same variety of bean (for example Ecuador, Dominican Republic, Guatemala, Honduras). To illustrate this, our evening’s Talk included tastings of - chocolate! Guided by Lindsay, we were encouraged to use our taste buds to detect flavours; just like wine-tasting, the soil at the growing stage give the fruit their individual flavour.

The evening ended with knowledgeable answers to the audience’s questions and many of us made inroads in our Christmas lists – with chocolate purchases.

Lindsay, who started her business in Louth - hence the 'spire' in her name -  before moving her business to Humberston, was thanked for a pleasant and interesting evening and I’m sure we will welcome her again another time.
